This relish is so good we’ve been known to eat it straight out of the jar, but it’s best saved for carrot dogs, fried green tomatoes, or on a veggie wrap.
Ingredients:
- 1 small zucchini
- 1 small onion
- 1 Tbsp. salt
- 1/2 cup apple cider vinegar
- 1/8 cup sugar
- 1 tsp. turmeric
- 1 tsp. celery seed
Preparation:
Grate the zucchini and dice the onion finely. Place in a colander and sprinkle with salt. Put the colander in the sink for 2-hours to drain. Rinse with water and squeeze zucchini and onions dry. Place vinegar in a small saucepan and add sugar, turmeric, and celery seed. Bring to a soft simmer and stir until sugar dissolves. Add zucchini and onions, cover, and turn off heat. Let cool completely, then use a slotted spoon to put the relish into a glass jar and refrigerate.
