The Van Pantry

What can we say? We don’t have a lot of room in our van. For example, we used to keep dozens of our favorite spices, herbs, salts, oils and vinegars, etc. on hand in our respective homes to make whatever we might imagine. No longer! We now have space for 12-small jars of herbs and spices, our salt cellar and pepper grinder, 2-oils and 4-vinegars. It’s like this now for every category of our pantry, kitchen cabinets, and tiny fridge.

So here’s the list of what we keep on hand to make most of the dishes we will share on this blog.

Pantry:

  • 2 pastas (in a box or a bag)
  • 2 pasta sauces
  • 2 packages “good” ramen
  • 1 package Knorr’s rice dish
  • 1 package freeze-dried mashed potatoes
  • 1 package dried hashbrown potatoes
  • 1 can diced tomatoes
  • 1 squeeze tube tomato paste

  • Freeze dried mixed vegetables

  • TVP (textured vegetable protein)
  • 2-4 foiled pouches tuna

  • 2 cups bulger wheat (couscous)

  • 2 cups ancient grains (or rolled oats)

  • Small squeeze jar honey

  • 12 herbs and spices: cumin, curry, garam masala, coriander, smoked paprika, chili powder, cayenne, red pepper flakes, turmeric, dried ginger, mixed Italian herbs, and herbs de Provence
  • whole pepper and a grinder
  • 3 salts: sea salt flakes, pink Himalayan salt, and smoked sea salt

Fridge:

  • Pickles, olives (after they’re opened)
