Rusty and I recently started paying attention to the Mediterranean diet, which I prefer to call a “lifestyle” rather than a “diet.” This recipe is a great and van-friendly example.
One thing about van life, you have to be spontaneous and willing to change your plans.
This is such an easy recipe, but the key is the broth. It's all about the ginger and garlic!
On our way from Tulsa and northern Arkansas (and several weeks of visits with family and friends) toward Kentucky and the east coast, we found ourselves passing through the Ozarks. The Ozarks are old… really old.

Like the Buddha bowl, the Poke Bowl is full of flavor, texture and color! The difference is adding animal-based protein like eggs or kimchi.
Even with fires raging in Carson National Forest, the nearby Rio Grande del Norte National Monument, and its trails and campgrounds, was open. Lucky us.
We love sushi and we love Poke Bowls, so here’s a recipe that combines the best of both. It’s fresh and light and comes together pretty quickly.
