A humble veggie wrap seems like it would be a no-brainer, just throw a bunch of veggies on a wrap, and roll it up, right? But some veggie wraps are better than others, and there are some tips for successful rolling. First off, you need some “glue” to hold the whole thing together. We often use hummus, but you can use other “glues” like cream cheese or avocado.
For this wrap, use a large, soft veggie tortilla. Lay it on a cutting board and slather all over with hummus. Be sure to spread it thinly all the way to the edges. Then lay baby spinach leaves across the entire tortilla, leaving an edge of hummus, which will keep the wrap from falling apart. Then add a pile of your favorite veggies to the center of the wrap. Opt for “soft” veggies like chopped tomatoes, thinly sliced cukes, sprouts, grated carrot, etc. Start rolling your wrap from the bottom then stop half way, and turn the sides over what you just rolled, and then continue rolling from the bottom until your wrap is complete.
Hint: The more veggies inside, the harder the roll.
You want to hold the wrap firmly to get a good seal, but don’t be too aggressive, otherwise you can tear the wrap. You might need to practice to get it right. At this point you can slice the wrap and serve it as is, but you can also wrap it in plastic wrap and store in the fridge for a bit. And there you have it, a perfect veggie wrap!
One reason wraps are great for van living is because they don’t use any fuel, and it’s a good way to use up bits of veggies from the fridge. It’s also very healthy!
