Honey Mustard Salmon and Greens

We’ve like to eat fish or seafood once a week or so. It’s a good source of omega-3 fatty acids and so many other important minerals that keep our hearts and brains healthy… or so they say. Mostly, it just tastes so good! This dish is really easy to make in the van, and we’ll often prep it early in the day before we go on a day hike. When we get back to the van, dinner is ready in 10 minutes!

Ingredients:

  • ¾ lb salmon, cut into 2 servings
  • ¼ cup mustard
  • 3 Tbs honey
  • 2 cloves garlic, minced
  • 1 Tbs lemon juice
  • 1 tsp smoked paprika
  • 2 large servings of spinach/arugula mix
  • Lemon juice
  • Olive oil
  • salt and pepper

Preparation:

Mix mustard, honey, garlic, lemon juice and smoked paprika in a Ziploc bag. Place salmon in bag and marinate in fridge until you’re ready to cook, at least 4-6 hours. To cook the salmon, place in a hot skillet along with its marinade. Cook 4-5 minutes on each side until salmon is golden and caramelized. While salmon is cooking, toss greens with a little lemon juice, salt and pepper, then drizzle with a little olive oil. Divide greens onto 2 plates, then place the salmon on top and garnish with some fresh parsley. Serve alone or with your favorite side. Simple and yummy!
