These vegan delights will surprise you! They’re so decadent, and quite easy to make in the van. Besides, Ren made them for our 6th handfasting and they were perfect!
Serves 4
Ingredients:
- ½ avocado, mashed/pureed very well
- Zest of one small tangerine
- Juice of ½ small tangerine
- ½ cup dark chocolate chips, melted in a double boiler or microwave
- ⅓ cup finely chopped salted, roasted pistachios
Preparation:
Combine the first 4 ingredients, mix very well. Add about 2 tablespoons of pistachios and mix again. Refrigerate for 10-15 minutes. When chilled enough to handle, roll mixture into 8 balls of equal size, then roll in the remaining chopped pistachios. Refrigerate until ready to eat.
