Miyeok-Guk Soup

Lately we’ve been drawn to Korean history, culture, and food, and were fascinated by this easy seaweed breakfast soup recipe. This soup is so full of vitamins and nutrients that you’ll feel great all day! It’s traditionally served on birthdays in Korea. This is our van-friendly version.

Serves 3

Ingredients:

  • 2 cloves minced garlic
  • 2 Tbs sesame oil
  • 2 Tbs soy sauce
  • 2 Tbs dried seaweed, like Wakame
  • 3-4 cups beef bone broth
  • ¼ lb finely sliced beef
  • Chopped scallions

Preparation:

Sauté the garlic gently in sesame oil until it becomes soft, but do not brown it. Add soy sauce, seaweed, and broth. Bring to a simmer and cook for about 3-4 minutes until seaweed is tender. Add sliced beef and stir gently until beef is just barely cooked through. Add more broth if desired. Serve immediately in bowls with a scoop of rice and a sprinkle of scallions. Serve with salt and pepper.

If you want to make this vegetarian, substitute veggie broth instead of beef broth, and tofu or tempeh instead of beef.
