Mussels Marinara

When we’re feeling the need for something a little more decadent, this dish fits the bill. This is a very easy one pot meal, using frozen mussels, which are available at most stores in the seafood aisle. You can serve it as is with bread or pour it over pasta or rice.

But don’t let the mussels sit around for too long. Prepare this meal the same day you resupply, unless you’ve got a decent freezer in your van.

Makes 4-6 servings

Ingredients:

  • 2 lb package frozen mussels with shells
  • 2 Tbs olive oil
  • 14 oz. can chopped tomatoes
  • 2 jars clam juice
  • ½ cup red wine
  • 1 medium onion, thinly sliced
  • 5-cloves garlic, thinly sliced
  • 1 ½ Tbs Italian seasoning
  • 1 Tbs crushed red pepper
  • Salt and pepper
  • Lemon wedges

Preparation:

In a large pot, sauté onions, garlic, Italian seasoning, and crushed red pepper until veggies are soft. Add tomatoes, red wine, tomato paste, and clam juice. Simmer for about 15 minutes until liquid reduces a bit. Add salt and pepper to taste. Add mussels and simmer for a few minutes more until everything is hot and bubbly. Serve in bowls with lemon wedges and crusty bread for sopping up the sauce.
