Pasta with White Clam Sauce

This is a great recipe to have on hand when you want a delicious meal with a “gourmet” feel. All the ingredients are pantry staples, except for the fresh parsley and lemon. Serve this with crusty bread for sopping up all the juices.

Serves 2

Ingredients:

  • 1 Tbs olive oil
  • 4 cloves garlic, minced
  • ½ white onion, finely chopped
  • 2-jars Snow’s clam juice
  • 1 can baby clams
  • ½ cup white wine
  • 1 cup chopped fresh Italian parsley
  • 8 oz angel hair pasta
  • Salt and pepper
  • Lemon wedges

Preparation:

Sauté garlic and onion in olive oil until soft, then add clam juice and white wine. Simmer for about 5-10 minutes until sauce is reduced a bit, then add clams. Cook pasta according to package directions, drain, and add to clam sauce, tossing well to absorb the juice. Taste and add salt and pepper. Add parsley and serve in shallow bowls with lemon wedges and parmesan cheese if desired.
