Orange Udon Noodles with Broccoli

There are so many different kinds of noodles out there, for so many different applications. Some, however, cook much faster than others, and so save fuel. Ramen, rice noodles, and pre-cooked udon noodles are some excellent examples of this.

Pre-cooked and packaged udon noodles

This quick and tasty dish comes together in about 15 minutes. Feel free to use any of your favorite vegetables, and add tofu or shrimp for extra protein.

Ingredients:

  • 2 Tbs vegetable oil
  • ½ red onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 Tbs grated ginger
  • 1 small crown of broccoli, cut into florets
  • 7 oz. fresh udon noodles
  • 1 Tbs chili garlic paste
  • ¼ cup soy sauce
  • 1 tsp sesame oil
  • 2 tsp rice wine vinegar
  • 1 to 2 Tbs brown sugar, to taste
  • Zest and juice of 1 small orange

Preparation:

Heat oil in a sauté pan, and add onion, garlic, ginger, and broccoli. While the vegetables are cooking, make a sauce with chili garlic paste, soy sauce, sesame oil, rice wine vinegar, brown sugar, orange juice and zest. After a few minutes, add the sauce and heat until sauce is hot and bubbly. Add udon noodles and stir until noodles are hot.

Serve with cilantro and orange slices.
