Jackfruit Tacos


Jackfruit is one of those vegan meat alternatives, and done right it is so close to pulled pork or shredded chicken that many can’t tell the difference. But fresh jackfruit is huge and requires lots of prep. Canned jackfruit is a great alternative for vanlife, as long as you drain and rinse it several times to get the “canned” flavor out. To prep, cut off the tough ends, then shred the jackfruit with your fingers, and squeeze out excess moisture using a towel.

Ingredients:

  • Olive oil
  • Taco seasoning
  • One large can jackfruit, prepped as above
  • 5 small colored peppers, seeded and cut into small pieces
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 handful chopped cilantro
  • Juice and zest of one lime
  • 4 tortillas
  • Taco toppings, like tomato, sour cream, grilled onions, jalapenos, salsa, extra cilantro

Preparation:

Drizzle a little olive oil in a skillet, heat to medium, and add jackfruit, peppers, onion, garlic, and cilantro. Sauté until veggies are soft, all the time sprinkling taco seasoning over all to taste. Wrap tortillas in foil, and place on top of jackfruit mixture, then cover to warm tacos. Scoop jackfruit into tortillas and served with your favorite toppings.
