Hatch Chile Bagel Sandwich

While traveling in New Mexico we discovered Hatch Chile Bagels. New Mexican Hatch chile peppers are grown in the Hatch Valley of New Mexico, where the growing conditions are perfect for peppers. Apparently, the weather, terrain, and soil of the Rio Grande flood plain give the Hatch chile the perfect balance of heat and sweet. Hatch Chile Bagels, sold at markets throughout New Mexico, are spicy and cheesy, and huge. We tried them first for breakfast with eggs, and they were delicious, but they make an even better sandwich!

Serves 2

Ingredients:

  • 2 Hatch Chile bagels, sliced and toasted
  • 1 avocado, scooped or mashed
  • 1 tomato, sliced
  • ¼ red onion, thinly sliced
  • 2 Tbs chopped cilantro
  • Sea salt
  • Lime wedges

Preparation:

Spread the avocado over the bottom halves of the cut bagels. Add tomato slices and sprinkle sea salt on top. Then top with sliced onion, a squeeze of lime, chopped cilantro, then the bagel tops. Using toothpicks, secure the fillings, and slice bagel sandwiches in two.
