Greek Potato Salad

We love Greek salad; it’s always one of our go-to recipes, but we were out of fresh lettuce. We did, however, have some red potatoes in the bin that needed eating, and we had all the other ingredients on hand too. We liked the result so much that we had to share it here.

Serves 4

For the Dressing – You can use your favorite off-the-shelf Greek salad dressing, or you can make your own from scratch for a little extra freshness. We love our homemade dressings; they all seem just a little bit better that store-bought. And, they’re really pretty easy to make.

Dressing Ingredients:

  • ¼ cup extra virgin olive oil
  • 3 Tbs red wine vinegar
  • 1 tsp prepared Dijon mustard
  • 1 garlic clove, grated
  • ½ tsp lemon zest
  • ½ tsp dried oregano
  • ¼ tsp sea salt
  • Freshly ground black pepper

Preparation:

Mix all the ingredients and set aside in the fridge for at least 2 hours. When you’re ready to use the dressing, taste. If you want a little more brightness to your dressing, consider adding a tsp of lemon juice and/or more salt.

For the Salad – This recipe pretty much uses all the same ingredients you would normally find in a traditional Greek salad, except you substitute potatoes in place of the greens. If you like potato salad and you like Greek salad, you’re going to love this!

Salad Ingredients:

  • 1 lb of red potatoes, cut into bite-sized pieces
  • ½ medium onion, coarsely chopped
  • ½ cup cherry tomatoes, halved
  • ½ cup Kalamata olives, drained
  • ¼ cup pepperoncini (or similar) pickled peppers
  • 4 oz feta cheese, coarsely diced
  • Small handful of dill weed, chopped
  • Salt and pepper

Preparation:

Boil the potatoes until just al dente. Drain the potatoes and cover with cold water to stop the cooking process. After a couple minutes, drain the potatoes again. Add the rest of the ingredients, except for the salt and pepper, and toss. Add half the Greek dressing and gently toss again, being careful not to crush the potatoes. Taste. Adjust by adding more dressing, salt and pepper, as desired.

Serve up your awesome Greek potato salad with your favorite protein and maybe a side veggie for a delicious and savory meal everyone will love.
