Garlic Shrimp

We recently sampled some delicious Peel ‘N Eat Shrimp at a beachside bar. It was so good, we thought we’d try to come up with a van-friendly version. The result is so simple it doesn’t really need a recipe, but here ya go anyway.

Serves 2

Ingredients:

  • 10 large or jumbo shrimp, peeled, deveined, tails on
  • 5 Tbs unsalted plant butter
  • Juice of one lemon
  • 3 large cloves garlic, coarsely chopped
  • 1 tsp Italian seasoning

Preparation:

Place butter, lemon juice, garlic, and Italian seasoning in a sauté pan and bring to heat slowly. You’re looking to cook the garlic without browning it. When garlic is aromatic, add shrimp and simmer gently for 3 minutes until shrimp is cooked through. Serve in a small bowl with French bread for dipping.
