Did you know that red lentils cook in half the time as brown lentils? They make for a fast and delicious soup that uses less fuel, and that’s important to us living in our van.
Ingredients:
- Olive oil
- 2 cloves garlic, minced
- ½ onion, chopped
- 2 mini sweet bell peppers, chopped
- 1 small carrot, cubed
- 1 serrano pepper, sliced
- 2 teaspoons curry powder
- 1 cup red lentils
- Vegetable broth
- 1.76 oz. package coconut milk powder
- Salt and pepper
Preparation:
In a saucepan, sauté garlic, onion, pepper, carrot, and serrano in olive oil until veggies begin to get tender. Sprinkle with curry powder, then add lentils and vegetable broth, enough to cover all the ingredients. Simmer gently for 15-20 minutes. Add more broth as needed. When lentils are cooked, stir in coconut milk powder, and add salt and pepper to taste.
