Cauliflower Corn Tacos

When we resupply our fridge and pantry, we often find ourselves buying the same things. So it’s no surprise we often make the same dishes over and over. That’s not all bad since we like them, but if we want to keep sharing new recipes with you, we have to try new things, right?

On our last trip to the grocery store, I noticed that the cauliflower looked especially nice… and it was on sale. I also remembered a recipe I’d seen for cauliflower tacos. I thought, “why not?” and grabbed an ear of corn too for good measure. My take of this recipe turned out really well (according to Rusty as he was downing his third taco) and can be adapted to use any of your favorite veggies.

Ingredients:

  • Olive oil
  • ½ head cauliflower, cut into florets
  • 1 ear corn, kernels removed
  • ½ red onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • Small flour tortillas
  • Taco toppings, like chopped tomatoes, julienned lettuce or spinach, sliced jalapenos, salsa, hot sauce, cilantro, shredded cheddar, and sliced limes.

Preparation:

In a small bit of olive oil, sauté cauliflower, corn, onion and garlic, and sprinkle with taco seasoning. Stir occasionally until veggies are soft. Serve on flour tortillas with your favorite toppings. Easy and delicious!
