Carrot Lox & Bagels

OMG! This tastes so surprisingly good! This is a vegan version of salmon lox and bagels, It’s easy to make in a van, and very inexpensive compared to actual salmon.

Serves 2

Ingredients:

  • 2 large carrots, peeled
  • 2 Tbs soy sauce
  • 1 tsp liquid smoke
  • Juice of ½ lemon
  • 1 Tbs rice wine vinegar
  • 1 bagel, cut in half
  • 1 avocado
  • Capers
  • Red onion, sliced
  • Lemon wedges

Preparation:

Using a vegetable peeler, peel carrots into long strips. Place in a saucepan with about ½ cup water, cover, and steam until tender. (Do not overcook!) Combine soy sauce, liquid smoke, lemon juice and rice wine vinegar in a Ziploc bag and add carrots. Seal and refrigerate for at least one day. When ready to serve, toast bagel halves in a frying pan, top with mashed avocado, carrots, capers, and red onion.  Use carrot lox within 3-days for best flavor and texture.
