When we decided to move into our van full time, we dreaded losing a real oven. And since pizza is one of our favorite foods, we couldn’t imagine a world without it. We experimented making pizza over an open fire, but many campgrounds don’t have fire rings or wood. Plus, it’s a lot of work to make a fire just to cook a 10-minute pizza.
So, Rusty came up with a way to cook pizza in a frying pan. We start out with small pizza crusts we found at the Dollar Tree. We also buy sundried tomato pesto and basil pesto at Aldi, and smear that over the crusts. Then top with mozzarella, and whatever toppings we have on hand.
To cook, we put a bit of olive oil in our frying pan, and bring it to medium heat. Then lay the assembled- pizza in the pan, cover it, and turn the heat to low. We let it sit like this for about 8 minutes. Because the crusts are thin, they cook quickly and get super crispy. The heat from the pan melts the cheese and when the pizza is done it’s just perfect!
Some of our favorite toppings are olives, thinly sliced Roma tomatoes, artichoke hearts, capers, anchovies, pepperoncini, and pickled jalapenos. Sometimes we use feta cheese instead of mozzarella.
We still miss home baked pies, bread, and cookies, but we never have to go without our pizza again!
