What’s not to like? These vegetarian tacos go together in about 15 minutes, which is perfect after a long day on the road.
Ingredients:
- 2 Tbsp. olive oil
- 2 cloves garlic, minced
- ½ medium onion, chopped
- 1 large jalapeno, sliced
- 1 can black beans, drained well
- 1 Tbsp. lime juice
- ½ pkg. taco seasoning (about ½ oz.)
- Small flour tortillas
- Toppings of your choice
Preparation:
Saute garlic, onion, and jalapeno in olive oil until vegetables are soft. Add black beans, lime juice, and taco seasoning and simmer gently until mixture is thick. Scoop beans onto tortillas and top with your favorites, like cilantro, scallions, lettuce, shredded cheese, salsa, sour cream, and chopped tomatoes. Makes 6 tacos.
